This temperature sensor (OEM 251 919 501D) sends the signal to your dashboard's temperature gauge - so you know what temperature your engine is running at. The part is located in the cylinder head and directly measures the coolant temperature. After decades - the sensor can react slowly or fail completely - resulting in an unreliable reading. Combine this with a new temperature gauge for a complete upgrade of your temperature monitoring.
